Verstehe gerade nicht, warum die root-Partition nach /sysroot gemountet
werden soll und nicht nach /.

Ich würde sagen, das xfs-Modul fehlt in der initrd:

eis # lsinitrd initrd-5.10.37-eisfair-1-SMP.gz | grep xfs
eis # lsinitrd initrd-5.10.45-eisfair-1-SMP.gz | grep xfs

Ergänze mal in /etc/dracut.conf die Zeile

add_drivers+="xfs"

und baue die initrd für deinen 5er-Kernel neu.

Kommst du nun weiter?
